Cool down from these hot summer days with an easy to prepare cabbage slaw. This recipe can be easily adapted by adding crunchy, raw peppers, they will add a bit of color and vitamin C!

Green cabbage is a low calorie veggie that is high in vitamins, minerals and antioxidants. This crunchy vegetable is full of gut friendly insoluble fiber and also rich in soluble fiber. Both help to keep our digestive system healthy by providing fuel for friendly bacteria.

ingredients

1 cup mayonnaise or veganaise

1 tbsp granulated sugar

1 tbsp wasabi paste, or more to taste

4 tsp white vinegar

½ tsp salt

¼ tsp black pepper

6 cups thinly shredded cabbage, about 1 head

1 cup grated carrot, about 2-3

½ cup red onion, thinly sliced

instructions

In a small bowl, whisk together mayonnaise or veganaise, sugar, wasabi, vinegar, salt and pepper. Allow the slaw dressing to refrigerate for at least 10 minutes or until ready to use. This will give the sugar time to dissolve.

In a large bowl, toss together cabbage, carrots and onion.

Stir in the slaw dressing and serve immediately for a crisp and yummy slaw. The slaw veggies will soften after they are dressed, so this salad is best served right away.
