450 g (16 ounces) linguine

1kg (4 1/2 cups) vegetable broth

2 dl (1 cup) water

4 cloves garlic, thinly sliced

1 1/2 tablespoon soy sauce

1/2 teaspoon red pepper flakes

2 inches of a ginger root, sliced into 1/4 inch slices

1 large carrot, peeled and julienned

1/2 head broccoli, cut in florets

1/2 onion, sliced thin

1 red bell pepper, julienned

1/2 zucchini ,julienned

1 small bunch green onions, cut 2 inch slices

225 g (1 cup )roasted salted peanuts

3 tablespoons peanut butter

One small bunch of cilantro, sliced

Juice of two limes



Place all ingredients except peanuts ,cilantro and lime juice in a large stockpot.

Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 12-14 minutes, stirring every 2 minutes or so. Cook until pasta is al dente and almost all liquid has evaporated.

Season to taste with salt and pepper and stir in cilantro and lime juice.
