Celeriac is a root vegetable, also sometimes known as celery root. There are many health benefits that make this root vegetable worthwhile to use.  Traditional Chinese medicine has always used celery root to lower high blood pressure. Additionally, this root vegetable has anti-inflammatory, antioxidant, antibacterial and anticancer properties. Enjoy it in our salad this week, along with beets and carrots!

ingredients

1 large carrot, peeled

1 medium beetroot, ends trimmed and peeled

½ large celeriac, ends trimmed and peeled

A large handful of fresh mint leaves, finely chopped

Juice from 1 lemon

2-3 tbsp extra virgin olive oil

Sea salt and ground black pepper, to taste

instructions

Finely shred the carrot, beetroot and celeriac using a mandolin, grater or your food processor. Combine in a bowl (leave the beetroot out until just before serving, if you do not want to completely cover everything with it’s juices.) Add mint and mix well to combine.

In a small bowl, combine lemon juice, extra virgin olive oil, salt and pepper. Whisk well to make a dressing. Pour on your celeriac, carrot, beetroot and mint mixture. Season with plenty of salt and pepper. Serve immediately and enjoy!
