Cabbage is a leafy green that grows in a rosette shape. There are over 400 different varieties of cabbage farmed all over the world.

Cabbage is a great source of fiber and is packed with various phytonutrients such as sulforaphane and anthocyanins. These compounds are powerful antioxidants which protect the body from the damage caused by free radicals.

ingredients

1 head cabbage

3 tbsp coconut oil

1 tbsp salt

1 tbsp pepper

instructions

Preheat the oven to 200 degrees C.

Slice the cabbage, starting at the top of the head. Slices should be about 1 cm each.

Prepare a baking sheet with cooking spray or olive oil. Place the cabbage slices in a single layer on the baking sheet. Drizzle with coconut oil. Sprinkle with salt and pepper. Roast for 35-40 minutes or until the cabbage is tender in the middles and the sides are golden brown.

Remove and serve immediately. Enjoy!
