This simple and healthy veggie blend of potatoes, carrots and green beans is seasoned with a delicious garlic and fresh herb blend and then roasted.

It’s a delicious side dish (or midday snack) that pairs well with just about anything like chicken, beef, pork and seafood.



300 gr green beans, end strimmed, halved

400 gr baby red potatoes, halved

3-4 carrots, scrubbed clean, cut intopieces

4 cloves garlic, minced

3 tbsp olive oil, divided

1 tbsp chopped fresh thyme

1 tbsp chopped fresh rosemary

salt and freshly ground black pepper to taste



Preheat the oven to400F / 200C.

Ina large bowl toss together potatoes, carrots with 2 1/2 tbsp olive oil, thyme, rosemary and season with salt and pepper to taste. Spread the veggies in a deep baking dish / tray. Roast for 20 minutes in a preheated oven.

Toss green beans in a bowl withthe remaining ½ tbsp of olive oil and season lightly with salt. Add to the baking sheet with the other veggies. Add the garlic and toss everything and spread into an even layer.

Roast the veggies until they are tender and slightly browned,

For about 20 minutes longer. Serve the veggies hot.
