tuna & asparagus pasta

250g tomatoes

2 tablespoons olive oil

3 garlic cloves minced

1 red onion, diced small

250g asparagus, trimmed and cut into 1″ pieces

2 cans tuna fish

2 cups vegetable broth

12 ounces penne

1/2 cup shredded parmesan Cheese

1 small bunch basil, chopped

1 small bunch parsley, chopped

Salt and pepper

Olive oil


In a small pan, boil water. Add the asparagus and boil for 3 minutes. Remove from pan immediately and place in a bowl of ice cold water.

Heat the olive oil. Sauté the onions until soft. Add the garlic and sauté 1 minute. 
Stir in the tuna, Basil and Parsley.

Add the broth and bring to a simmer over medium low heat. 
Meanwhile cook the pasta al dente and drain. 
Add the tuna mixture to the pasta.

Heat through.

Add the halved tomatoes and blanched asparagus.

Season with salt and pepper. 
Serve warm with Parmesan cheese.
