one pot ground chicken chili

“This recipe is easy and delicious! I wanted something light so I went for a Ground Chicken Chili so that the chili would have the texture of traditional beef chili. To make the dish extra creamy I used a whole brick of cream cheese. I like to add a little bit of Chipotle Sauce to it!”

ingredients

2 bell peppers, diced

3 green chilies, seeded and diced

1 red onion, diced

3 cloves garlic, minced

2 tablespoons (30ml) vegetable oil

2 pounds (900g) ground chicken

2 ears corn, kernels only

2 cans cannelinibeans, drained

2 cans blackbeans, drained

1 can red kidney beans, drained

4 cups (1000 ml) water

1 chicken bouillion

1/2 tablespoon(7.5ml ) cumin

1 tablespoon (15ml) oregano

8 ounces (220ml) creamcheese

instructions

In a large pot, sautéthe onions and bell peppers in the vegetable oil until softened.

Add the chicken and sautéuntil cooked through.

Add all the remaining ingredients to the pot.

Simmer for 30 minutes or until the cream cheese has melted, stirring occasionally.

To garnish: enjoy with lots of green onions, cilantro, limes and sliced avocados!
