miso grilled eggplant

The recipe is developed by Fanny Liao from Sprout Lifestyle. She is a certified nutritionist and cooking teacher. She loves seasonal cooking & using fresh vegetables to create delicious family meals. Her specialty is fusion dishes which combine Chinese flavours and cooking concepts with Western modern twists.


1-2 large eggplants washed, sliced into half lengthwise and then half horizontally large pieces

chives washed & chopped for garnish

2 tbsp white miso paste

¼ cup water

1 tbsp mirin (Japanese rice wine)

salt & pepper (*optional)


pre-heat your oven to 180C on grill/fan oven setting

place eggplants on a baking tray on aluminum foil

Bake in the oven for 10-15 minutes (depending on how large and thick your eggplant are.)

Prepare your miso sauce: mix the miso paste, water, mirin in a small mixing bowl until a nice creamy sauce is formed.

Once your eggplants are soft and slightly browned (but not 100% cooked) remove from the oven, spread some miso and continue to grill for 5 more minutes to allow flavor of miso into the eggplant

Remove from the oven, garnish with chives and/or coriander and serve with rice or as a side dish to a meal.
