1 head cabbage, cored and shredded
16 small tomatoes
2 snack cucumbers, seeded and diced
2-3 sliced green onions
Handful of chopped mint
½ dl (1/4 cup) olive oil
½ dl (1/4 cup) lemon juice
2 tablespoons white or rice


In a large bowl, combine all of the ingredients.

Adjust the amount of lemon juice, vinegar and salt to your preference.
Meanwhile, sprinkle salt.

For best taste, cover and refrigerate for 30 minutes

You can substitute dried mint for fresh mint.
