creamy celery soup

1 head celery

1 large garlic clove

1/2 large onion

1 medium potato

4 ounces (115 g) butter

1 small bunch parsley

3 cups (7 dl) water

1 vegetable bouillon cube

1/2 cup (1 dl) heavy cream, optional

Salt and pepper


In a large saucepan, melt the butter and sauté the celery, Parsley, onions and potatoes. Season with salt and pepper.

Sauté for about 10 minutes or when the vegetables are softened.

Add water and the bouillon. Cover and boil for 10 minutes.

Purée with an immersion blender. Strain through a fine mesh strainer.

Add 1/2 cup heavy cream and warm over low heat.

Serve with extra celery leaves, olive oil and freshly-cracked black pepper.
