bok choy salad

8 heads of bok choy, halved

1/2 cup / 100 gr soft goat cheese

handful of toasted pine nuts

1/2 onion, chopped

1/4 cup / 0.6 dl maple-syrup

1/4 cup / 0.6 dl balsamic vinegar

1 garlic clove, sliced

1/4 cup / 25 gr fresh rosemary

1 tbsp / 30 ml olive oil

1/4 teaspoon salt


In small saucepan, cook the onion, maple syrup, balsamic vinegar, garlic and rosemary over medium-high heat until syrupy (and reduced by half), for about 12 minutes. Strain.

In large bowl, toss together 8 heads bok choy (halved), olive oil and salt.

Place on greased grill pan over medium-high heat; grill, turning occasionally, until grill-marked, for about 5 minutes.

Transfer to serving plate. Sprinkle with goat cheese. Drizzle with maple syrup mixture. Sprinkle with toasted pine nuts
