ingredients

 

1 zucchini, chopped

2 potatoes, chopped

4 carrots, chopped

¼ onion, finely chopped

1 beetroot, chopped

3 garlic cloves, finely grated

3cm of fresh ginger, finely grated

coconut milk (1 can of 400ml)

10 curry leaves (if dry ones, take more)

5 kafir lime leaves

olive oil or plant based oil

juice of 1 lime

salt to taste

freshly ground black pepper

instructions

Heat oil in a large saucepan or stockpot over medium heat. Add the onion,garlic, gingerand roast until aromatic.

Add the beetroot, carrot, zucchini and potato.

Stirin the other spices and add the coconut milk.

Cook for around 20-30 minutes with low heat.Puree (including the leaves!) till the soup is smooth.

Add salt and lime juice to taste.
