This super easy salad is full of healthy fruits and veggies! Featuring apples, carrots and loads of greens.

Apples are a good source of soluble fiber, the type which will help lower blood cholesterol levels. They also contain polyphenols, which have an antioxidant effect. Most of these are concentrated in the peel, so be sure to eat the whole apple!

2 apples, grated or chopped

2 carrots, grated or chopped

2 cups cooked quinoa

½ cup chopped almonds or walnuts

1/3 cup chutney (or apricot jam mixed with 1tsp apple cider vinegar)

½ cup red romaine lettuce greens, chopped

½ head of cabbage, chopped

1 tbsp minced cilantro (Chinese parsley)

salt and pepper to taste


Cook quinoa according to package directions, allow to cool in refrigerator.

Chop or grate all fruits and veggies.

Combine all ingredients in a mixing bowl. Top with cilantro to taste. Serve immediately.
