raw cauliflower salad

1 head of cauliflower
1 handful of pine nuts
1 clove of garlic
1 tbsp of lemon juice
3 tbsp of olive oil
Sea salt & pepper


Roast the pine nuts and leave them to cool off.

Break the cauliflower into small pieces and chop the garlic.

Mix the cauliflower, pine nuts and garlic in a bowl and add a dressing of olive oil, lemon juice, salt and pepper.

Garnish with parsley and enjoy.
