chicken and cabbage salad

1 cup cooked shredded chicken

1 Chinese cabbage,

sliced thin

2 carrots, cut into thin matchsticks

1 cup small tomatoes, halved

1 small bunch cilantro, chopped

1/4 cup sliced almonds

4 tbsp almond butter

1/4 cup apple cider vinegar

2 tbsp olive oil

1/2 tbsp soy sauce

2 tbsp honey

1/2″ piece of ginger

1 small garlic clove

Salt and pepper, to taste


Combine all of the ingredients for the salad and toss with your hands.

Almond ginger dressing

In a food processor or blender, blend all of the ingredients. Refrigerate until ready to use. Can be made up to 7 days ahead.


Before serving toss the salad with the almond ginger dressing. Serve cold.
