Our recipe this week uses pears in a different and delicious way. Serve this crisp to a crowd; its sure to please! Pears originated in China. They are high in fiber, helping your digestion, and they are a wealth of antioxidants like vitamin C, to help combat various diseases from our body!

crisp topping

1 cup quick oats or GF rolled oats

2/3 cup whole wheat pastry flour or millet

½ cup walnuts

1 ½ tsp cinnamon

½ cup coconut oil or sunflower seed oil

¼ cup coconut sugar or brown sugar

1-2 tbsp agave syrup or maple syrup

pear filling

4-6 pears, peeled, cored and cut into bite size pieces

½ cup dried cranberries, sweetened or unsweetened

2 tbsp lemon juice

¼ cup agave syrup or maple syrup


Preheat oven to 175 C/350 F. Combine all topping ingredients in a food processor until they begin to clump together and resemble granola. Set aside.

Peel, core and slice pears into bite sized pieces. Spread pears into an 8 ½ x 11 glass baking dish. Scatter dried cranberries over the pears and shake pan to mix. Combine lemon juice and agave or maple syrup. Pour liquid over pears.

Loosely cover pears with crumb topping. Cover the dish with aluminum foil and bake covered for 30 minutes. Remove aluminum foil and bake uncovered for another 20-30 minutes until the crumble topping is browned. Cool on a wire rack for 30 minutes before serving. YUM!
