kale & quinoa salad

Kaleis a superfood — it is among the most nutrient dense foods that exist. Kale contains a substance that will bind the bile acids in your digestion and help to lower your cholesterol levels, also helping your heart!

3 cups kale, tough stems removed, chopped

2 cups cooked quinoa

½ cup cucumbers, diced

½ cup tomatoes, diced

vinaigrette dressing

½ cup extra virgin olive oil

3 tbsp white wine vinegar

1 tbsp apple cider vinegar

2-3 tbsp honey

2-3 tbsp lemon juice


In a small bowl, add vinaigrette ingredients. Whisk together olive oil, white wine vinegar, apple cider vinegar, honey and lemon juice until thoroughly mixed. Taste and adjust to your liking.

Add chopped kale to a large salad bowl. Pour half of the vinaigrette mixture on top. Using clean hands, massage the vinaigrette into the kale by applying pressure and rubbing the leaves in between your fingers. Do this for about one minute. Set kale aside for about 20 minutes to allow kale to soften.

While the kale is softening, cook the quinoa. In a small saucepan combine 2 cups water or stock and 1 cup dried quinoa. Bring to a boil and then turn heat down, saucepan covered, to simmer for about 15 minutes or until all the water is absorbed. Allow to cool.

Add tomatoes, cucumbers and quinoa to the kale mixture. Add more dressing to taste and mix well. This salad can be eaten immediately or will keep in the refrigerator overnight. Enjoy!
