veggie chickpea stew

The veggie chickpea stew is a great dish. Tasty & healthy. Serve over brown rice or eat plain. Or with this great kale salad. Try this version with orange, sunflower or pumpkin seeds.


2 cans of chickpeas (do notdrain!)

2 tbsp olive oil

1 large onion, finely chopped

2 cloves garlic, grated

1 medium red bell pepper, diced

2 medium tomatoes, diced

2 medium carrots, diced

1 tsp dried basil and 1 tsp dried oregano

2 bay leaves

1 can tomato paste (6 ounces)

2 cups water

salt& black pepper (to taste)


In a saucepan or large soup pot, sauté the onions in the olive oil over medium heat. Cook for 4-5 minutes.

Add the garlic and continue to cook for 1-2 minutes. Add in the chickpeas (along with the liquid), bell pepper, tomatoes, and carrots. Stir well and cook for 2-3 minutes. Add in the dried basil and oregano, bay leaves, black pepper, and tomato paste. Stir to combine. Add the water and stir. Cover and reduce heat to a simmer. Simmer for 30 minutes.

Taste, and add the salt if needed.

With the lid off, allow to simmer for 5 minutes or so, or until desired consistency/thickness is achieved.

Cut the oranges in small cubes. Remove the stem from the kale and combine with toasted sunflower or pumpkin seeds..

Add a dressing of extra virgin olive oil, vinegar, (dijon) mustard, agave syrup, salt and pepper before serving.
