This simple and healthy veggie salad blends of roasted pumpkin, green beans, red pepper, green onion.

It brings a rich flavour and nice summer vibe with thai spicy peanut sauce which makes it suit summer night.

Pumpkins are a warm-weather crop. good sourc eof vitamin A and vitamin C. And you can use them to add creamy taste and color to salads.



1 small pumpkin, cut into cubes

1 tablespoon olive oil

1 cup quinoa

1 3/4 cups water

230g green bean, trimmed and cut into bite sized pieces

1 red pepper, diced

2 green onions, sliced

1/4 cup roasted peanuts, chopped

1/4 cup spicy peanut sauce

1/4 cup coconut milk

salt and pepper to taste

1/2 lime

thai spicy peanut sauce

1/4 cup peanut butter

1/2 cup water or coconut milk

2 tablespoons lime juice

2  tablespoons palm sugar

1 tablespoon chili sauce

2 tablespoons peanuts roasted and chopped


Preheat oven to 400F/200C.

Toss the pumpkin and green beans with olive oil, salt and pepper, place in a single layer on a baking pan and roast in the oven about 20 minutes until tender, mixing midway through.

Meanwhile, place quinoa and water in a pot, bring to a boil and follow the instructions on the package.

Toss everything into the mixture of the peanut sauce and the coconut milk.

Drizzle with lime juice. Enjoy!
