2-3 sweet potatoes,

peeled and sliced thin

120 g (1 cup) toasted pecans

50 g (4 tablespoons) butter

60 ml (1/4 cup) maple syrup

Pinch of cinnamon

Pinch of salt


Heat the butter and maple syrup in a pan to create a glaze.

Lightly grease a cupcake pan. Brush the butter mixture on a slice of sweet potato and place it in the cupcake pan. Repeat with 5-6 sweet potatoes.

Add the pecans to the remaining butter mixture. Stir to coat. Add a spoonful of the pecans to the top of each sweet potato stack.

Bake at 190 C (375F) for 30-40 minutes or until the potatoes are soft.

Use a spoon to carefully remove the stacks from the pan. Serve hot as a side dish or as a dessert.
