½ pumpkin, peeled and cut into cubes

2 potatoes, peeled and cut into cubes

2 carrots, peeled and cut into cubes

1 beet, peeled and cut into cubes

2 sprigs fresh thyme (alternatively dried)

1 tbsp of olive oil

A small handful of green olives

50 g feta cheese (optional)

Parsley, chopped

instructions

Preheat oven to 200°C (400°F). Line a large baking tray with parchment paper. Toss the vegetables with the thyme and olive oil, season with salt and pepper, and place the vegetables on the prepared tray. Bake for 30-35 minutes or until tender. Add olives, feta cheese and parsley before serving.
