700 g potatoes
8 dl water
250 g spinach
1 shallot
½ clove of garlic
1 tbsp. of cold pressed
rapeseed oil


Peel the potatoes and cut them in thin slices.

Boil the potatoes in 1 liter of water for approx. 15-20 minutes until they are soft. Wash the spinach thoroughly.

Peel the shallot and garlic, cut them in thin slices and sauté them in a pan with the rasp oil. Make sure the onions don’t change color.

Chop the spinach, mix it with the onions and sauté for 30 seconds.

Pour the potatoes and water in the pot with the spinach and onions and boil it for two minutes.

Blend the soup in a blender or use a hand held one. Make sure that all lumps are smoothen out.

Serve the soup warm with crispy bread and add a topping of your own choice.
