2 tablespoons olive oil

1 pound ground beef

1 onion, diced small

6 garlic cloves, minced

1 small bunch basil leaves, slices thin

4 large (2 pounds) tomatoes, diced small

3 tablespoons tomato paste

5 1/2 cups water

1 parmesan cheese rind

500g spaghetti noodles

200 g fresh buffalo mozzarella cheese, grated (or parmesan cheese)

Extra basil leaves and olive oil for garnish


Sauté beef and onions in 2 tablespoons olive oil

Sauté garlic 1 minute

Add tomatoes, paste, basil, salt, pepper, parmesan cheese rind and water. Bring to boil. Add noodles and stir regularly for 18-20 minutes or until the liquid has evaporated and noodles are al dente.

Stir in buffalo mozzarella cheese

Top each bowl with extra basil leaves and a drizzle of olive oil.
