mint kale pistachio pesto

3 garlic cloves

1 cup fresh mint (large handful)

1 cup kale, stems removed (large handful)

1 lemon, juiced

1 cup (2.2 dl)  olive oil

1 cup pistachios, shelled
(large handful)

1 cup (100 g) parmesan cheese

Salt and pepper


Add all of the ingredients to the food processor and process until smooth.

Store in the refrigerator for up to 2 weeks.
