12 small potatoes or 6 large

1/4 cup of butter, melted

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1 cup shredded cheddar cheese

1 cup diced tomatoes

1 small bunch green onion


In a large pot boil the potatoes in water for 45 minutes until they’re VERY soft.

Drain water. Grease a baking sheet and preheat oven to 375F/200C.

Place potatoes on the tray and use a masher or the bottom of a cup to smash them.

Mix the butter, garlic powder and smoked paprika.

Drizzle the potatoes with the butter mixture.

Bake for 20 minutes. Sprinkle with cheddar cheese and tomatoes then bake for 5 more minutes.

Top with sour cream and green onions.
