1 onion, diced small

2 tbsp olive oil

1 tbsp sunflower oil

1/4 cup brown lentils

1 medium potato, peeled and cubed

2 carrots, diced

2 celery, diced

1 tbsp cumin powder

1 lemon, juiced

1 small bunch cilantro

Salt and pepper, to taste

6 cups water


1 lemon, wedged


In a medium sized pot, heat the oils and sauté the onions until opaque and slightly brown.

Add the water and the lentils. Bring to a boil, reduce heat to low and simmer for 30 minutes.

Add the vegetables, cumin, cilantro, salt and pepper and continue simmering for about 10 more minutes or when the vegetables are soft but still al dente.

Pour in the lemon juice.

Serve warm with extra lemon wedges.
