4 cups of kale, finely chopped

½ red onion, finely chopped

1 cup of mango, cubed

¼ cup toasted sunflower – or pumpkin seeds


3 tbsp extra virgin olive oil

2 tbsp vinegar

1 tsp dijon mustard

1 tsp honey

salt and pepper


Combine the kale, onion, mango and sunflower seeds in a large bowl.

Mix all the ingredients for the dressing and add it to the salad. Sprinkle the salad with sunflower seeds and serve immediately after.
