This simple soup is easy to cook at home. We know it sounds interesting, but give it a try; it is actually delicious!

Often called a miracle food, an apple a day really may keep the doctor away! The antioxidant content of apples is among the highest for fruits and research shows that antioxidants help to prevent cancer. Apples also are high in Vitamin C and fiber, which have been shown to assist with bone health, pulmonary health and weight management.

ingredients

2 tsp olive oil

2 apples, peeled and finely chopped

¾ cup potato, peeled and diced

1/3 cup onion, finely chopped

¼ cup celery, thinly sliced, plus leaves for garnish

¼ tsp dried sage

¼ tsp paprika

2 cups vegetable broth

3 tbsp sour cream, yogurt or unsweetened soy yogurt

instructions

Heat oil over medium heat. Add apple, potato, onion and celery; cook, stirring often, until onion is translucent, about 5 minutes.  Stir in sage, paprika, salt and pepper to taste; cook 30 seconds. Pour in vegetable broth and bring to a simmer. Reduce heat, cover and gently simmer until potato is tender when pierced with a fork, 10 to 15 minutes.

Transfer the soup to a large blender or food processor to blend (use caution when pureeing hot liquids!). Garnish with yogurt and celery leaves.
