This healthy roasting mixed vegetable is easy! Roasting veggies is one of the healthiest cooking methods you can employ, since it uses dry heat to soften the vegetables and roasting veggies in extra virgin olive oil enriches the flavor, lending a smoky sweetness or tender texture.

½ lotus root, peeled, cut into 5mm slices

2-3 carrots, peeled, cut vertically in half or quarters

¼ broccoli head, cut into florets

½ cup tomatoes, cut into quarters

½ cup mushrooms

2-3 tsp fresh herb, chopped (use your favorite: thyme, rosemary, basil or parsley)

¼ cup extra virgin olive oil

Salt and pepper to taste


Preheat oven to 200 degrees C (400 degrees F). Line a baking pan with non stick foil or brush pan with olive oil.  Lay all veggies down in a single layer.

Brush all veggies with extra virgin olive oil and season with salt, pepper and chopped herbs. Roast for 15 minutes.

Turn all veggies and continue to roast for an additional 15-20 minutes. Remove from the oven and sprinkle with additional salt and pepper to taste. Garnish with additional fresh herbs.
