This quick and easy Curry Cabbage is healthy and full of flavor!

Cabbage is filled with nutrients and an excellent source of vitamin C which provides anti-inflammatory benefits. Curry cabbage is also gluten-free and low in fat.

1 green cabbage, washed

2 table spoons(30 ml) coconut oil

1  carrot, chopped

½ cup (60 gr) onion, chopped

2 cloves garlic, minced

1 tsp ground cilantro

1 tsp ground turmeric

2 springs of fresh thyme(or 1 tsp dried thyme leaves)


1 can coconut milk(14 ounce can)

1/2 cup(125 ml) water

sea salt to taste


Slicethe cabbage in 1 inch (2.5 cm) thick strips, set aside in a bowl.Heat the coconut oil in a large saucepan on medium high heat. Add onion and garlic and cook until it is soft after about 3 minutes of stirring.

Add coriander, turmeric, thyme, cumin, carrot, cabbage and stir. Add coconut milk and water and bring to a boil.

Cover the saucepan and reduce to a simmer and cook for about 20 minutes or until sauce thickens.

Delicious served with brown rice, quinoa or baked potatoes and a salad!
