Chill out with cold cucumber gazpacho, perfect for a hot summer evening!

Cucumbers are good for overall health since they are mostly made of water and important nutrients that are essential for the body.

The flesh of cucumbers is rich in Vit A, C and the skin is rich in fiber and minerals.

ingredients

4-5 snack cucumbers, diced, plus extra for garnish

half an onion, diced

1 lemon,juiced

1/4 cup mint, chopped

1 teaspoon salt

5 tbsps olive oil

2 cups water

 

instructions

In a food processor, combine cucumbers, onions, lemon juice, mint and salt and pulse till finely chopped.

With the processor running, slowly add olive oil and blend until smooth. Thin to desired consistency with water.

Chill 30 minutes or up to 2 hours before serving.

Garnish with additional diced cucumber.
