These fritters are a great snack or meal. Feel free to add cauliflower, carrots or sweet potato to add more veggies to the mixture!

ingredients

1 head broccoli, cut into small florets

¼ cup onion, chopped

¼ cup packed cilantro

¼ teaspoon salt

½ teaspoon garlic powder

½ teaspoon smoked or regular paprika

1 teaspoon chipotle pepper powder

1 teaspoon oil

1 tbsp bbqsauce (optional)

¾ cup chickpea or whole wheat flour

instructions

Place broccoli florets, onion and cilantro in food processor. Process until well blended. Transfer to a bowl and add the rest of the ingredients. Mix well to distribute spices. Allow to sit for 2 minutes to allow the broccoli mixture to leak moisture. If the mixture is too wet to form into patties, add a bit more flour, if the mixture is too dry add a few drops of water and mix until perfect consistency.

Shape into 5 or 6 small patties (or 2-3 larger patties), about 2 inches in diameter. Heat skillet over medium heat. Add oil and allow to warm. Pan fry the broccoli patties for 4-5 minutes per side. Serve with siracha, ketchup or bbqsauce.
