45g (1 ½ cups) chickpeas

1 bell pepper, seeded and diced

30g (1 cup) diced onion

30g (1 cup) parsley/cilantro chopped

1 large diced tomato

2 diced snack cucumbers

Salt and black pepper to taste

Pumpkin seed dressing :

20g pumpkin seed butter

40g olive oil

A squeeze of fresh lemon, 1 tsp of honey (optional)

A pinch of salt

Water (if the dressing is too thick)


In the bottom of a mixing bowl whisk together pumpkin seed butter, honey, salt and lemon juice.

Add the olive oil and continue whisking until combined. Add water if the dressing is too thick.

Toss in the chickpeas and the veggies and season with cilantro salt and pepper.
