2 chicken breasts
½ pineapple
2 fresh mangos
2 handful of corn
1 handful of bamboo shoots
1 baby Chinese cabbage

curry dressing
200 grams mayo or yoghurt (or half/half)
2 tbsp curry
Pinch of sea salt
5 grinds of black pepper


Cut the pineapple, bamboo shoots and mango into dices. Cut the baby Chinese cabbage in small square pieces and mix it with the corn.

Roast the chicken breasts in butter and remember to check that they are sufficiently cooked. Shred the chicken and mix it with the other ingredients.

Make a dressing of mayo/yoghurt, salt, pepper and curry. Stir the dressing until is has a nice golden color.

Gently mix all the ingredients. Complete your salad by adding coriander as garnish.
