Beets are rich in nitrates, which the body converts to nitric oxide – a compound that relaxes and dilates blood vessels, turning them into superhighways for your nutrient and oxygen rich blood. That means better circulation and possibly lower blood pressure.  Beets help your heartbeet!

These beetroot burgers are easy to make, high in protein, vegan and delicious. Top with avocado and sprouts for a well balanced meal!

1 cup cooked quinoa

2 garlic cloves, minced

¼ cup onions, chopped finely

1 cup zucchini, shredded

1 tsp chili pepper

juice from ½ lemon

1 cup oats

¼ cup flax seed

1 beet, peeled and chopped

½ sweet potato, peeled and chopped

siracha, to taste


Preheat oven to 180 degrees C (350 degrees F). Cook quinoa: Add olive oil to a pot, roast 1/2 cup quinoa. Add 1 cup water and bring to a boil. Lower heat to a simmer for 15 minutes or until all water is absorbed. Fluff with a fork and set aside.

In one bowl, combine cooked quinoa, zucchini, oats, flaxseed, chili pepper, lemon juice and salt, set aside.

Boil chopped beets and sweet potato until tender. Drain water and mash together.

In a pan, heat 1 tbsp olive oil. Add onion and garlic and cook until onion is translucent, about 5 minutes. Add beets and sweet potato and stir fry another few minutes. Add to dry ingredients.

Form into patties and bake for 20 minutes. Add your favorite toppings and enjoy!
