baked zucchini casserole

2 zucchinis

1/2 cup butter

1 medium onion, diced

2 eggs, slightly beaten

1 tablespoon sugar

1 cup breadcrumbs

fresh rosemary

salt and fresh ground black pepper to taste


Slice the zucchinis thin.

Preheat oven to 375F (1900C) 


In a large mixing bowl, combine the zucchini, half the butter, onions, rosemary, sugar, salt, pepper, eggs.

Pour into a 2 quart casserole dish. 
Combine the breadcrumbs with the other half of the butter and spread over the casserole.

Bake in oven for 45 minutes.

This dish can be prepared a day ahead (stored in the refrigerator) or baked the day you’re planning on enjoying it.
