170 g (3/4 cup) butter

170 g (3/4 cup) packed brown sugar

150 g (1/2 cup) sugar

1 tsp baking powder

1/4 tsp baking soda

1/2 tsp cinnamon

1/4 tsp cloves

1/4 tsp nutmeg

Pinch of cardamom

Pinch of salt

2 eggs

1 tsp vanilla

400 g (1 3/4 cup) flour

450 g (2 cups) oats

2 apples, finely diced

2-3 pieces candied ginger, finely diced (optional)

225 g (1 cup) powdered sugar

2-3 tbsp water

instructions

Cream butter and sugar for 3 minutes, scraping sides of the bowl.

Add eggs and vanilla. Beat to combine.

Mix together the flour, baking soda, baking powder, salt and spices.

Add the flour mixture 110 g ( 1/2 cup) at a time with the mixer on. Stir in the oatmeal, apples and candied ginger. Combine well.

Drop by rounded tablespoons 2 inches apart on a parchment lined baking sheet. Bake at 1900C (375F) for 10-12 minutes. Cool on the sheet for 1 minute then transfer to a wire rack and cool completely.

When cool, whisk together the powdered sugar and water, 1 tablespoon at a time to create a slightly thick icing. Drizzle over cookies.
